The six-course menu can be enjoyed in The Montcalm’s Nirvana Kitchen, a sophisticated modern space with a relaxed atmosphere and a gentle rose gold hue throughout. The menu itself is an exploration of pan-asian dishes, created with the finest ingredients and a touch of fine dining finesse. Although the dishes are not served in a typical sequential course style (they are in fact grouped into pairs for sharing, the experience flows excellently and each dish is delivered with aplomb. Before our meal, we also popped into the Nirvana Bar, for a sublime pair of Mojitos!
The meal began with Tomato Ceviche and crispy salted squid. The ceviche saw heritage tomatoes combined with crispy taro root, kumquat, crispy corn and citrus chili tomato yuzu. Fresh, vibrant and light. The salted squid was tender and matched the accompanying ginger and lemongrass dip perfectly. All in all, a great start to the meal.
However, it was the ensuing dishes that really hit the mark and elevated the experience to a new level a watermelon duck salad arrived at the table and it was a joy to each. The duck was cut through perfectly by the watermelon, mandarin and pomegranate for a well balanced dish.
A trio of delicious dishes were then assembled on the table and they were all of the highest quality. Miso salmon, the restaurant’s Nirvana Baby Chicken and a fabulously spiced lamb massaman curry were all to die for. Every one of these dishes sang with flavour, elegance and we wolfed down every morsel.
